Carter Family Recipes

This upgraded breakfast quesadilla combines a crisp, buttery tortilla with fluffy, perfectly cooked eggs, sweet caramelized tomatoes, wilted spinach, melted Monterey Jack and sharp cheddar cheeses, and cool, creamy avocado. Optimized specifically for the Breville Control Freak®, the recipe uses precise temperatures to produce restaurant-quality results with exceptional consistency.

Ingredients

  • 1 large burrito-size flour tortilla
  • 3 large eggs
  • 1 Tablespoon heavy cream
  • 3 teaspoons unsalted butter, divided
  • 1 medium Roma tomato, seeded and sliced
  • 1 packed cup fresh spinach, roughly chopped
  • 2 Tablespoons thinly sliced green onions
  • 2/3 cup freshly shredded Monterey Jack cheese
  • 1/3 cup freshly shredded sharp cheddar cheese
  • 1/2 ripe avocado, sliced
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon smoked paprika
  • Pinch ground cumin
  • Fresh cilantro, chopped
  • Flaky sea salt
  • Fresh lime wedges
  • Chili crisp, salsa verde, or your favorite hot sauce

Preparation

  1. In a medium bowl, whisk together the eggs, heavy cream, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and cumin until completely smooth and slightly frothy.
  2. Preheat the Breville Control Freak® to 330°F. Melt 1 teaspoon butter. Add the tomato slices and cook for 1 to 1½ minutes per side, until lightly caramelized. Transfer to a plate.
  3. Reduce the temperature to 300°F. Add the spinach and cook for 20 to 30 seconds, just until wilted. Remove and gently squeeze out any excess moisture.
  4. Reduce the temperature to 285°F. Melt the second 1 teaspoon butter. Pour in the egg mixture and stir slowly with a silicone spatula, forming soft curds. During the final 30 seconds, fold in the green onions. Cook until the eggs are soft, fluffy, and still slightly glossy. Immediately transfer them to a plate.
  5. Increase the temperature to 315°F. Melt the remaining 1 teaspoon butter. Place the tortilla in the skillet and toast for 30 to 45 seconds. Flip the tortilla.
  6. Sprinkle half of the Monterey Jack and cheddar cheeses over one half of the tortilla. Layer the filling in this order:
    • Eggs
    • Spinach
    • Caramelized tomatoes
    • Remaining cheese
  7. Fold the tortilla over the filling. Cook for 3 minutes, pressing gently with a spatula once or twice to ensure even browning.
  8. Flip the quesadilla and cook for an additional 2½ to 3 minutes, until both sides are deeply golden brown and crisp and the cheese is completely melted.
  9. Transfer the quesadilla to a cutting board and allow it to rest for 2 minutes.
  10. Carefully open the quesadilla just enough to tuck in the avocado slices. Squeeze fresh lime juice over the avocado and sprinkle lightly with flaky sea salt.
  11. Garnish with chopped cilantro and a light drizzle of chili crisp, if desired. Slice into wedges and serve immediately with salsa verde or your favorite hot sauce.

Cook’s Notes

  • The Control Freak® temperatures are optimized for each stage of cooking and produce consistently excellent results.
  • The eggs should remain slightly glossy when removed from the pan. They will finish cooking inside the quesadilla and remain exceptionally tender.
  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Removing the tomato seeds prevents excess moisture and helps keep the tortilla crisp.
  • Allowing the quesadilla to rest before slicing keeps the filling intact.
  • Pepper Jack may replace part of the Monterey Jack for a spicier version.
  • Cooked bacon, breakfast sausage, or chorizo make excellent additions for a heartier meal.
