  • 250 grams feta cheese, well drained and crumbled
  • 1/2 medium ripe avocado, approximately 75 grams of flesh
  • 1/2 cup walnuts, lightly toasted and finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1 medium garlic clove, finely minced
  • 1 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon freshly ground black pepper

Herb & Spice Coating

  • 1 teaspoon red pepper flakes
  • 1 teaspoon nigella seeds
  • 1 1/2 teaspoons white sesame seeds
  • 1/2 teaspoon dried rosemary, finely crushed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 teaspoon sweet paprika

For Serving

  • 1/4–1/2 cup extra virgin olive oil
  • Fresh dill sprigs, for garnish
  • Additional toasted walnuts, finely chopped, for garnish (optional)

Instructions

Prepare the Walnuts

  1. Place the walnuts in a dry skillet over medium-low heat.
  2. Toast for 3–5 minutes, stirring frequently, until fragrant and lightly golden.
  3. Transfer the walnuts to a plate and allow them to cool completely.
  4. Finely chop the walnuts, reserving a small amount for garnish if desired.

Prepare the Cheese Mixture

  1. Place the feta cheese, avocado, fresh dill, garlic, lemon juice, and black pepper in a food processor.
  2. Pulse several times until the ingredients are combined but retain some texture. Avoid processing the mixture into a completely smooth purée.
  3. Add the cooled, chopped walnuts and pulse briefly, just until incorporated.
  4. Transfer the mixture to a bowl, cover, and refrigerate for 30 minutes, or until firm enough to shape.

Prepare the Herb & Spice Coating

  1. Combine the red pepper flakes, nigella seeds, sesame seeds, rosemary, thyme, oregano, and paprika in a shallow bowl.
  2. Stir thoroughly to distribute the herbs and spices evenly.

Shape the Cheese Balls

  1. Using a small cookie scoop or teaspoon, divide the chilled cheese mixture into approximately 18–22 equal portions.
  2. With clean, slightly damp hands, gently roll each portion into a ball approximately 1 inch in diameter.
  3. Roll each cheese ball in the herb and spice mixture, gently pressing to ensure an even coating.
  4. Arrange the coated cheese balls on a parchment-lined plate and refrigerate until ready to serve.

Assemble & Serve

  1. Pour approximately 1/4 cup extra virgin olive oil into a shallow ceramic or glass serving dish.
  2. Arrange the cheese balls in a single layer, gently turning them to coat their undersides with olive oil.
  3. Drizzle additional olive oil over the cheese balls as desired.
  4. Garnish with fresh dill and reserved toasted walnuts.
  5. Serve chilled or slightly cool with warm pita bread, crisp crackers, or fresh vegetables.

Cook’s Notes

Choosing the Cheese

Traditional feta made from sheep’s milk or a blend of sheep’s and goat’s milk provides a pleasantly tangy flavor and firm, crumbly texture. Avoid very soft feta-style spreads, which may make the mixture difficult to shape.

Avocado Ripeness

Select an avocado that yields slightly to gentle pressure but is not overly soft. An overripe avocado introduces excess moisture and can make the cheese balls mushy.

Adjusting the Consistency

If the mixture is too soft after chilling, incorporate an additional tablespoon or two of finely chopped walnuts or crumbled feta. Avoid adding breadcrumbs, which can dilute the flavor and change the texture.

Toasting the Walnuts

Toasting enhances the natural flavor of the walnuts and provides a pleasant contrast to the creamy cheese mixture. Allow the walnuts to cool completely before incorporating them into the cheese.

Adjusting the Spice Level

The combination of red pepper flakes and paprika creates a mildly spicy coating. For a gentler flavor, reduce the red pepper flakes to 1/2 teaspoon. For additional heat, substitute hot paprika for sweet paprika.

Nigella Seeds

These small black seeds contribute a slightly peppery, onion-like flavor that complements the feta and dill. They are sometimes marketed as black cumin but are not the same as conventional cumin seeds.

Make-Ahead Preparation

The herb and spice coating can be prepared several days in advance and stored in an airtight container. The walnuts may also be toasted ahead of time. For the freshest flavor and appearance, prepare the cheese mixture on the day of serving.

Storage & Food Safety

Because this recipe contains fresh garlic, fresh herbs, avocado, and cheese, keep the finished cheese balls refrigerated at 40°F or below. For best quality and a conservative storage window, consume within 24 hours.

Refrigerate promptly and avoid leaving them at room temperature for more than 2 hours. Do not store the cheese balls submerged in oil as a shelf-stable preserve. Discard any remaining garlic- and herb-infused serving oil.

Serving Suggestions

Warm Pita Bread

Serve with lightly toasted pita wedges brushed with olive oil. The warm bread provides a pleasant contrast to the chilled cheese balls.

Fresh Vegetable Platter

Accompany with cucumber slices, cherry tomatoes, radishes, and sweet bell pepper strips for a refreshing, crunchy contrast.

Mediterranean Mezze Board

Arrange alongside Kalamata olives, hummus, roasted red peppers, stuffed grape leaves, and crisp flatbread crackers.

Charcuterie Board

Serve as a creamy, savory addition to a charcuterie board featuring cured meats, marinated vegetables, assorted cheeses, olives, and toasted bread.

Beverage Suggestions

Sauvignon Blanc

Its bright acidity and citrus notes complement the richness of the avocado and feta while balancing the fresh dill and garlic.

Dry Rosé

A chilled, dry rosé provides refreshing acidity and subtle fruit flavors that pair nicely with the salty cheese and aromatic spice coating.

Pinot Grigio

This light, crisp white wine offers delicate citrus and green apple notes that complement the fresh herbs without overpowering the cheese.

Sparkling Water with Lemon & Mint

For a nonalcoholic option, serve chilled sparkling water with fresh lemon slices and mint leaves. Its clean, refreshing character balances the richness of the cheese and olive oil.
