Instructions
Prepare the Chicken & Aromatics
- Preheat the oven to 375°F. Lightly grease an 8-inch square baking dish or a similar 2-quart oven-safe baking dish.
- Heat the olive oil in a small skillet over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and translucent.
- Add the minced garlic and cook for an additional 30 seconds, until fragrant. Remove from the heat and allow to cool slightly.
- Shred the cooked chicken into bite-sized pieces and set aside.
Prepare the Creamy Enchilada Mixture
- In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.
- Add the green enchilada sauce, drained green chiles, sautéed onion and garlic, ground cumin, smoked paprika, and black pepper. Stir until thoroughly combined.
- Fold in the shredded chicken, ½ cup Monterey Jack cheese, and ½ cup pepper jack cheese. Mix until the chicken is evenly coated with the creamy enchilada mixture.
- Taste the mixture and season with salt as needed. Remember that the enchilada sauce, rotisserie chicken, and cheeses may already contain a considerable amount of salt.
Assemble & Bake
- Transfer the chicken mixture to the prepared baking dish and spread evenly.
- Sprinkle the remaining Monterey Jack and pepper jack cheeses evenly over the top.
- Bake uncovered for 25–30 minutes, or until the dip is heated throughout, the edges are bubbling, and the cheese is melted and lightly golden.
- For a more golden cheese topping, broil for an additional 1–2 minutes, watching carefully to prevent burning.
Garnish & Serve
- Remove the dip from the oven and allow it to rest for 5 minutes.
- Drizzle the fresh lime juice evenly over the surface.
- Garnish with chopped cilantro, sliced jalapeños, and green onions.
- Serve warm with sturdy tortilla chips, toasted tortillas, or your favorite accompaniments.
Cook’s Notes
Choosing the Chicken
Rotisserie chicken provides excellent flavor and convenience. Leftover roasted, grilled, or poached chicken also works well. Remove the skin and bones before shredding.
For the best texture, shred the chicken into small, bite-sized pieces that can be easily scooped up with a tortilla chip.
Choosing the Cheese
Freshly shredded Monterey Jack and pepper jack cheeses produce a smoother, creamier texture than many packaged shredded cheeses, which contain anti-caking ingredients.
For a milder version, replace the pepper jack with additional Monterey Jack. For a richer flavor, substitute up to ½ cup of the Monterey Jack with freshly shredded sharp white cheddar.
Choosing the Enchilada Sauce
Use a good-quality green enchilada sauce with a flavor you enjoy. Different brands vary considerably in acidity, saltiness, and heat.
A roasted tomatillo-based sauce adds a particularly pleasant tanginess that complements the rich cheeses and tender chicken.
Adjusting the Consistency
The finished dip should be thick enough to cling to a tortilla chip without being stiff.
If the mixture becomes too thick, stir in 1–2 tablespoons of warm chicken broth or additional green enchilada sauce. If using a particularly watery enchilada sauce, begin with ¾ cup and add more as needed.
Adjusting the Spice Level
Mild diced green chiles provide flavor without excessive heat. For a spicier version, use hot green chiles or add a finely diced jalapeño to the sautéed onion and garlic.
For a smoky variation, finely chop one chipotle pepper in adobo sauce and add it to the cream cheese mixture. This will introduce a noticeable smoky flavor and additional heat.
Make-Ahead Preparation
Assemble the dip up to 24 hours in advance, cover tightly, and refrigerate.
Remove the dish from the refrigerator while the oven preheats, then bake as directed. Allow approximately 5–10 additional minutes if the dip is still cold when placed in the oven.
Storage & Reheating
Refrigerate leftovers in an airtight container within 2 hours of serving and consume within 3–4 days.
Reheat leftovers in a covered baking dish at 325°F until the center reaches 165°F. Stir gently if necessary to restore the creamy consistency.
Individual portions can also be reheated in the microwave in short intervals, stirring between intervals until heated throughout.
