A smooth, rich cheddar sauce with a pleasantly sharp cheese flavor and a silky, pourable consistency. Built on a traditional butter-and-flour roux, this versatile sauce is especially good over Denver, Western, bacon, sausage, and vegetable omelettes. It can be prepared several days ahead and gently reheated for breakfast.

Cost: Level 2 Economical

Ingredients
2 tablespoons unsalted butter
1 1/2 cups whole milk
6 ounces sharp cheddar cheese, freshly grated
1/2 teaspoon Dijon mustard
1/8 teaspoon garlic powder
1/8 teaspoon white pepper
Kosher salt, to taste
Additional whole milk, as needed for reheating
Instructions
Melt the butter in a medium saucepan over medium-low heat.
Add the flour and whisk continuously for 1–2 minutes, until smooth and lightly bubbling. Do not allow the roux to brown.
Gradually whisk in the milk, adding a little at a time initially to prevent lumps.
Cook for 3–5 minutes, whisking frequently, until the sauce thickens enough to lightly coat the back of a spoon.
Reduce the heat to low. Add the Dijon mustard, garlic powder, and white pepper.
Remove the saucepan from the heat and gradually whisk in the grated cheddar, one handful at a time, until completely melted.
Taste and adjust with kosher salt. The sauce should be slightly thinner than conventional macaroni and cheese sauce.
Serve immediately or transfer to shallow containers for refrigeration.
Cook’s Notes
Cheese selection: Use a good-quality block of sharp cheddar. Avoid preshredded cheese, which may produce a less smooth sauce.
Prevent graininess: Do not boil the sauce after incorporating the cheese.
Consistency: The sauce should flow smoothly from a spoon without forming a heavy blanket over the eggs.
Portioning: Refrigerating the sauce in small containers makes it easy to reheat only what is needed.
