Carter Family Recipes

Silky, lightly tangy, and delicately savory, this French-inspired sauce combines freshly grated Parmesan with crème fraîche, softened shallots, and a touch of Dijon mustard. Its lighter consistency makes it an elegant finishing sauce for a Classic French Omelette (Omelette Française), particularly when accompanied by mushrooms, spinach, ham, or asparagus.

A small amount of sodium citrate helps keep the cheese smoothly emulsified, making the sauce more forgiving when prepared ahead, refrigerated, and reheated.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon shallot, very finely minced
  • 3/4 cup whole milk
  • 1/2 cup full-fat crème fraîche
  • 3 ounces Parmesan cheese, freshly and finely grated
  • 1/2 teaspoon sodium citrate (approximately 2 grams)
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon white pepper
  • 1 small pinch freshly grated nutmeg
  • Kosher salt, if needed
  • Additional whole milk, as needed for reheating

Instructions

  1. Melt the butter in a small, heavy-bottomed saucepan over medium-low heat.
  2. Add the minced shallot and cook gently for 2–3 minutes, stirring frequently, until softened and translucent without browning.
  3. Add the milk and sodium citrate, whisking until completely dissolved.
  4. Warm the mixture gently until steaming, without allowing it to boil vigorously.
  5. Reduce the heat to low and gradually add the Parmesan, whisking continuously until the cheese melts and the mixture becomes smooth.
  6. Remove the saucepan from the heat and whisk in the crème fraîche until fully incorporated.
  7. Add the Dijon mustard, white pepper, and nutmeg.
  8. Taste before adding salt, as Parmesan contributes considerable saltiness.
  9. For an exceptionally smooth presentation, blend briefly with an immersion blender and pass through a fine-mesh sieve if desired.
  10. Adjust the consistency with additional warm milk, 1 tablespoon at a time, until the sauce flows smoothly from a spoon.
  11. Serve immediately or transfer to shallow containers for prompt refrigeration.

Cook’s Notes

Parmesan selection: Use freshly grated Parmigiano Reggiano for the best flavor and texture. Avoid shelf-stable grated Parmesan.

Sodium citrate: A small quantity helps stabilize the cheese emulsion and reduces the likelihood of separation during reheating. Weighing approximately 2 grams is preferable to relying on a volume measurement.

Crème fraîche: Full-fat crème fraîche provides a subtle tang and smooth texture.

Temperature control: Incorporate the crème fraîche off the heat to help preserve its delicate texture.

Consistency: The sauce should be lighter and more fluid than Alfredo sauce.

Presentation: Spoon a small pool onto the plate and position the omelette partially over it, leaving its smooth, pale exterior visible.

Serving Suggestions

  • Classic French Omelette (Omelette Française): Spoon approximately 1 tablespoon of warm sauce onto the serving plate and position the omelette partially over it. Finish with fresh chives.
  • Spinach Artichoke French Omelette: The Parmesan and crème fraîche complement the spinach and artichokes.
  • Mushroom Omelette: Pair with deeply sautéed mushrooms and fresh thyme.
  • Asparagus Omelette: Serve with tender asparagus spears and a delicate ribbon of sauce.
  • Ham Omelette: Complement finely diced cooked ham with a small spoonful of sauce.
  • Oeufs Cocotte With Leeks, Mushrooms & Asparagus: Add a small amount as an optional finishing accent for a richer presentation.

Beverage Suggestions

  • Café au lait: A traditional breakfast pairing that balances the richness of the Parmesan and crème fraîche.
  • Dry Chardonnay: An unoaked or lightly oaked Chardonnay complements the creamy texture.
  • Sparkling mineral water: Serve with a lemon twist for a refreshing contrast.
  • Unsweetened iced tea: A light accompaniment for brunch.
  • Agave Lemonade: Its citrus acidity balances the savory sauce.

Storage and Reheating

Refrigeration: Transfer promptly to shallow airtight containers and refrigerate at 40°F or below for up to 3–4 days.

Reheating: Place the desired portion in a small saucepan over low heat. Add 1–2 teaspoons milk per 1/4 cup sauce, stirring frequently until smooth and thoroughly heated to 165°F. Avoid prolonged boiling.

Texture restoration: If the sauce thickens during refrigeration, briefly blend after reheating to restore a smooth consistency.

Freezing: Not recommended because freezing may adversely affect the crème fraîche texture.

Variations

Parmesan and Chive: Add 1 tablespoon finely chopped fresh chives immediately before serving.

Lemon Parmesan: Add 1/2 teaspoon finely grated lemon zest for a brighter sauce, particularly suitable for asparagus or seafood omelettes.

Parmesan and Thyme: Add 1/2 teaspoon finely chopped fresh thyme to complement mushroom omelettes.

Truffle Parmesan: Finish with a few drops of white truffle oil for a more luxurious presentation.
